Our culinary team has a new initiative for bringing the healthy menu on the table. As we concern for our guest’s wellbeing, we introduce our guest the “Takesumi Bamboo Salt” to their dish.

Our Executive Chef, Christophe Depuichaffray said that,”It’s a strong anti-oxidant that able to revitalize body cells effectively in a short time. Bamboo salt balances our bodies and helps to improve general health.” “We start to use the bamboo salt in Bella Cucina and KO Japanese restaurant, and working with Chef Riccardo Ioanna, Setyo, Ardana and Tenaya on some signature dishes with this product which look extremely healthy,” He continued.

Bamboo salt was originally developed by Korean monks and doctors almost 1,000 years ago as medicinal remedy and food’s taste enhancer. Takesumi salt is also called Take Shio in Japan, Jukyeom salt in Korea and Garam buluh in Indonesia and Malaysia. It’s an alkaline organic salt roasted in bamboo.

How bamboo salt is made?

Ingredients:

100% pure sea salt from East Bali is inserted into mature bamboo sections sealed with natural clay.

Bamboo sections are  roasted in furnace above 1000 degrees Celsius, in a traditional earth kiln for Takesumi (bamboo charcoal)  and the cooling  period can take  7 to 28 days (moon cycle)  depending the strength you researched.
